Hello and welcome to the first ever blog post from your community of East Riverside apartments! We’re thrilled that you’re joining us, and we hope to turn this blog page into a useful resource for residents for years to come. Here, you’ll be able to find tips about new restaurants, apartment decor suggestions, news about upcoming festivals and more. We’ll be writing two blogs per month, so bookmark this page and check back often!

 

For our first post, we thought we’d share some springtime recipes with our residents. Spring is all about using fresh ingredients and creating light dishes. With that in mind, we’ve put together a list of dishes that use fruits and vegetables that are in season. Chicken with Sugar Snap Peas and Herbs

 

Before you get started, make sure you have these ingredients:

 

  • Chicken Broth

  • Dijon Mustard

  • Salt & Pepper

  • Flour

  • Chicken Breasts

  • Olive Oil

  • Sugar Snap Peas

  • Chives and Dill

  • Artichoke Hearts

  • White Wine Vinegar

 

Here’s a super healthy recipe to start things off. This dish makes for the the perfect post-workout dinner, just make sure you know how to cook the chicken breasts! When you’re cooking the chicken breast, try this little trick: Cook one side for a minute on high heat, then flip the chicken breast over and turn the heat to low while covering the pan. Keep it on low for 10 minutes, then turn the heat off completely while keeping the pan covered for another 10 minutes. The end result will be one of the juiciest chicken breasts you’ve ever had!

 

Prosciutto-Wrapped Asparagus

 

Before you get started, make sure you have these ingredients:

 

  • Asparagus

  • Olive Oil

  • Salt & Pepper

  • Prosciutto

 

The next recipe on our list is also the easiest recipe on the list. THe hardest part about making this recipe is wrapping the sticky prosciutto around the thing asparagus, so if you can get the hang of that, you should be all set. One way to make it easier on yourself is to buy thick, organic asparagus. The thicker asparagus will take a little longer to cook, however, so keep that in mind when you’re following the directions for the recipe!

 

Salmon Burgers with Green Sauce

 

Before you get started, make sure you have these ingredients:

 

  • Salmon Filet

  • Red Onion

  • Cilantro

  • Ginger

  • Sea Salt

  • Mayonnaise

  • Sour Cream

  • Anchovy Fillet

  • Chives

  • Parsley

  • Lemon Zest

  • Lemon Juice

 

There’s a lot going on with these salmon patty burgers, but most of these ingredients are used in the making of the sauce. This salmon burger made our list of springtime recipes because it’s much lighter than the heavy, juicy burgers you probably ate to stay warm during the winter. This burger is lighter and it should be more flavorful as long as you’re not shy about adding lemon zest.
